Blueberry Muffins & Lemonade

Saturday I woke up feeling the need to do anything but what I needed to do: clean.  So, to get myself started and feel accomplished I made Blueberry Muffins and Homemade Lemonade.

In this shot I'm making the simple syrup for my lemonade and letting my second batch of blueberry muffins cool.




Never mind the dirty pan in the background, that had bacon from the night before, and cleaning it takes a while.  Meanwhile, the muffins were delicious and the lemonade tasted good after I went swimming after cleaning like I was suppose to.


I guess this is the time to confess, you will not find the blueberry muffin recipe here.  Because, it is not from scratch.  I know major food blogs everywhere let out a huge gasp, but there are times when I have neither the time (as was the case on Saturday) or the resources (fresh produce is expensive!).  As was also the case on Saturday.  It tasted delicious and if you have the ability to not tell anyone you too can enjoy good muffins at a great price and not too taxing on your time. 

Homemade Lemonade:

Ingredients:

1 Cup Water
1 Cup Sugar
1 Cup Lemon Juice

Combine the 1 Cup Water to the 1 Cup Sugar in a sauce pan.  Let them heat together until the sugar is combined and you no longer see sugar granules.

Add 1 Cup of your Lemon Juice to a pitcher, once the simple syrup is finished add it to your pitcher, then add about another 5 cups of water and stir to combine.  (You can add the water according to your taste as well as the lemon juice).  That's it!

Maybe this should become the anti-food blog since I refuse to ever add the following ingredients to my food:

Lettuce (of any variety!)
Onions (flakes yes, actual onions-no. Unless pulverised to the point where it has the flake consistency)
Peppers (not ground pepper, but bell pepper, hot peppers, banana peppers - not of it).
Beans (only green beans, only green beans)
Potatoes (I'm slowly trying things with sweet potatoes, but I still have a texture issue with it)
Peas (the worst food known to man in my opinion, other foods have a better chance of landing here before these ever will).

I'll lay off my loathing of other vegetables for now.  However, in an ironic twist I love V8 juice.  My pallet is off I know, but what are you going to do?

Attempted Cake Balls

So, I have attempted to make cake balls twice.  Each time I learn something new.  On the first attempt I learned that if using Almond Bark to coat the cake balls you need to use the whole batch.  I also learned that you need to make the balls slightly smaller.

On my second attempt I've learned that I really want to use candy melts.  As you can see from the pictures below there isn't much of a coating, but for the people I made it for that is okay.  They don't like a lot of coating to their cake balls.


Okay, I'll be honest with you.  Everytime I talk about Cake Balls (which we'll call pops from now onw) I think I'm in an SNL skit and/or a 13 year old boy.  However, I have this deep, twisted desire, to make blue cake balls.  And I will.  They make blue candy melts.  I just won't be showing these to my more mature friends and family members.  As they will not find it funny or understand why I'm laughing so hard.

I think for my next attempt I'm actually going to make a dinner.  Baking I'm staring to get down and having fun with. Chicken or Beef, that is what I'm fearful of making.  Well no fear... okay at this point I don't know if it is so much fear as time.  One way or another I will be making something soon.
